The 2021 Cabernet appears dark plummy purple, opaque and intriguing. Swirl it around and take a good sniff, the aromas come at you, ripe plums, dark creamy cherry, blackberry, vanilla, spicy clove, and cardamom accented with gardenia. The nose has a smoky, woody, and sweet aroma reminiscent of leather and tobacco. The flavors are no less robust with currant, dark cherries and fig jam combined with earthy flavors of tobacco, tree bark and clove guiding you to wonderful, mildly grippy tannins on the finish. This wine can be cellared for the rest of the decade, or will be lovely on your next Steak Night.

The 2022 Cabernet is a bold ruby color in the glass, with an initial waft of fine leather on the nose. With more swirling the fruit aromas show up, cherry, plum, jammy currant, followed by spicy cinnamon, clove, licorice and a faint smell of hickory wood. On the palate, smooth and soft, with dark cherry, plum compote, and blueberry, all building towards a sprinkle of cocoa and moderate tannins on the lingering finish. Pair this with a traditional French beef stew.
